Jodie & Fergal first met in 2009 and in 2015 they found the property in Rosslare Strand in Wexford for the whole family (2.3 children) to get to grips with. 

Chef Fergal Dempsey first trained in The Great Southern Hotel in Rosslare, County Wexford. A the young age of 19 he took a head chef position at The Tara Hotel in Amsterdam.  Since then he has worked all over Ireland taking various Head Chef positions. He did the consultancy on Le Bon Crubeen in Dublin & owned his own country pub in Kilkenny for 8 years. Fergal takes great pride in sourcing local produce everything from the meats, fish, lobsters, salad leaves, wild garlic, as well as foraging. His passion for food is shown in every dish that comes out of the kitchen.

Jodie the Front of House originally comes from a equine background after working for Godolphin in Ireland for many years. Jodie now has taken on the role of restaurant manager. Jodie & her team greet each customer with warmth and a smile, which helps customers to relax and to enjoy their time at Wild & Native.

Every customer gets to see how passionate Jodie is, always happy to help with food choices and is more than happy to accommodate any dietary requirements or changes to the menu. Jodie has a keen passion at pairing food and wines and has managed to introduce customers to wines that are not always chosen on wine lists.
