Jodie and Fergal first crossed paths in 2009, and by 2015, they had found the perfect property in Rosslare Strand, County Wexford — a new adventure for the whole family (2.3 kids and all!) to embrace together.
Chef Fergal Dempsey began his culinary career at the prestigious Great Southern Hotel in Rosslare. At just 19 years old, he accepted his first Head Chef role at The Tara Hotel in Amsterdam — a remarkable achievement that marked the beginning of a diverse and dynamic journey. Over the years, Fergal has held Head Chef positions across Ireland, consulted on Dublin’s Le Bon Crubeen, and even ran his own country pub in Kilkenny for eight years.
Fergal’s passion lies in local sourcing and foraging — from freshly caught lobster and fish to wild garlic, salad leaves, and quality meats. His commitment to showcasing the best of Irish ingredients is evident in every dish that leaves the kitchen.
Jodie, who leads Front of House, originally came from an equine background and worked with the esteemed Godolphin operation in Ireland. She then channeled all her energy and professionalism into managing the restaurant. Jodie and her team are known for greeting every guest with genuine warmth and a welcoming smile, creating a relaxed, friendly atmosphere from the moment you walk through the door. Jodie and her team brings a deep understanding of hospitality to the role — from expertly guiding guests through the menu and accommodating dietary needs, to pairing food with wines that often surprise and delight.
